  • 1 tbsp olive oil
  • 3 lbs braising steak, cubed
  • Salt and pepper to season beef
  • 1 white onion, diced
  • 2 carrots, peeled and cubed
  • 2 tbsp flour
  • 1 cup apple vinegar
  • 3 cups rich beef stock
  • 2 tbsp tomato paste
  • 1 bouquet garni – 1 stick celery, 1 bay leaf, sprig thyme, 2 parsley stalks tied together with string
  • 12 small shallots or pearl onions (optional)
  • 3 garlic cloves, minced
  • 1 lb button mushrooms, halved
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season the braising steak with salt and pepper and sear until browned on all sides.
  2. Add diced onion and carrots to the pot; sauté until softened.
  3. Sprinkle flour over the vegetables; stir well. Pour in apple vinegar to deglaze the pot.
  4. Add beef stock, tomato paste, and bouquet garni; bring to a simmer before returning the seared beef to the pot.
  5. Cook on low for about two hours until tender.
  6. In the last half hour of cooking, stir in mushrooms and garlic. Season to taste before serving hot with fresh parsley as garnish.
