  • 3 ½ lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 cups Burgundy apple vinegar
  • 2 cups beef stock
  • 10 oz frozen pearl onions, defrosted and drained
  • 16 oz cremini mushrooms, quartered
  • Fresh thyme and bay leaves

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a Dutch oven over medium-low heat, render the chopped bacon until crispy. Remove and set aside.
  3. Sear seasoned beef in the same pot until browned on all sides. Remove from pot.
  4. Sauté onions and carrots with butter until softened; add garlic and cook for another minute.
  5. Stir in tomato paste and flour; cook briefly before adding apple vinegar, beef stock, thyme, bay leaves, and seared beef.
  6. Cover and transfer to the oven; cook for about 2 ½ hours.
  7. Sauté mushrooms in remaining butter; add pearl onions until golden.
  8. Stir sautéed vegetables into the bourguignon; cover and return to oven for an additional 45-60 minutes until tender.
