  • 45 pound bone-in, skin-on turkey breast
  • 1/2 cup unsalted butter, softened
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • Slices of lemon
  • Slices of orange
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix softened butter with lemon zest, orange zest, chopped herbs, garlic, salt, and pepper until well combined.
  3. Loosen the turkey skin gently and spread half of the herb butter underneath it. Rub the remaining butter on top.
  4. Place the seasoned turkey in a roasting pan with quartered onion and citrus slices. Pour chicken broth into the pan.
  5. Roast until the internal temperature reaches 165°F (74°C), approximately 1 hour and 40 minutes. Baste occasionally.
  6. Let rest for 15-20 minutes before carving.
