  • 3/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cup cake flour (sifted)
  • 1 tsp baking powder

  • 1/4 tsp salt
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 6 tbsp brown sugar for cinnamon swirl
  • 5 tsp cinnamon for cinnamon swirl
  • 8 oz cream cheese for frosting
  • 8 oz butter for frosting
  • 2 cups confectioners sugar for frosting

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, beat together oil, butter, and sugar until light and fluffy.
  2. Add egg and vanilla; mix well. Fold in sour cream and milk until combined.
  3. In another bowl, whisk together cake flour, baking powder, baking soda, and salt. Gradually mix into wet ingredients until just combined.
  4. In a small bowl, combine brown sugar and cinnamon for the swirl.
  5. Fill lined muffin tins halfway with batter, sprinkle cinnamon mixture on top, then cover with more batter.
  6. Use a toothpick to swirl the mixture gently.
  7. Bake for about 16 minutes or until a toothpick comes out clean. Cool completely before frosting.
  8. For frosting: Beat cream cheese and butter until smooth; gradually add confectioners sugar and mix until creamy.
