  • 1 cup uncooked quinoa
  • 1 can (15 oz) white beans, rinsed and drained
  • â…“ cup red onion, finely diced
  • ½ cucumber, chopped
  • ½ cup fresh cilantro
  • 1 scallion
  • 12 cloves garlic
  • ¼ cup plant-based yogurt or olive oil
  • Juice and zest of two limes
  • 1 tbsp maple syrup

Instructions

  1. Rinse quinoa under cold water. Cook according to package instructions until fluffy, then let cool.
  2. While quinoa cools, blend cilantro, scallion, garlic, yogurt (or olive oil), lime juice and zest, coriander, vinegar (if using), and maple syrup until smooth.
  3. In a large bowl, combine cooled quinoa with white beans, red onion, and cucumber.
  4. Pour dressing over the quinoa mixture; toss until evenly coated.
  5. Serve immediately or chill in the fridge for 30 minutes to meld flavors.
