  • 3 Cups riced cauliflower
  • ½ lb chicken breast
  • Juice from one small lime
  • 1 Tablespoon coconut aminos
  • 1 Tablespoon Fresh cilantro chopped
  • ½ Tablespoon Honey
  • ½ Teaspoon Garlic powder
  • ¼ Teaspoon Salt
  • ⅓ Cup Cucumbers
  • ⅓ Cup Mangoes
  • ½ Avocado
  • ¼ Red onion
  • 1 Radish
  • 1 Clove Garlic
  • 2 Tablespoons Vinegar
  • 1 Tablespoon Olive oil

Instructions

  1. Heat a skillet over medium heat with olive oil.
  2. Sauté chopped purple onions for 2-3 minutes, then add riced cauliflower and cook until tender (6-7 minutes).
  3. In a bowl, mix lime juice, honey, coconut aminos, salt, and garlic powder; marinate chicken pieces.
  4. Cook marinated chicken in the skillet for 7-8 minutes until fully cooked.
  5. Chop cucumbers, mangoes, avocado, red onion, radish; mix with dressing ingredients.
  6. Serve riced cauliflower topped with chicken and fresh salsa.
