  • 1 red apple (diced)
  • 1 Anjou pear (or Bartlett pear, diced)
  • ½ red onion (chopped)
  • â…“ cup dried cranberries
  • â…“ cup crumbled feta cheese
  • â…” cup pecans (or walnuts)
  • â…“ cup brown sugar
  • ¼ teaspoon cinnamon
  • â…“ cup apple juice
  • â…“ cup apple cider vinegar
  • â…“ cup olive oil
  • 2 tablespoons honey
  • ¼ teaspoon black pepper

Instructions

  1. To make the dressing, combine apple juice, apple cider vinegar, olive oil, honey, and black pepper in a jar. Shake well until fully mixed.
  2. In a large bowl, toss together chopped romaine lettuce, diced apples, pears, chopped red onion, dried cranberries, and crumbled feta cheese.
  3. For the candied nuts, toast pecans (or walnuts) in a medium pan over medium heat for about 1-2 minutes. Add brown sugar and cinnamon; stir until coated and sugar dissolves. Let cool before roughly chopping.
  4. Just before serving, pour the dressing over the salad mixture and toss gently. Top with candied nuts.
