  • 6 Tablespoons granulated sugar, divided
  • 1 Tablespoon active dry or instant yeast
  • 5 Tablespoons unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 1 teaspoon salt
  • 4 cups bread flour, plus more as needed for hands/work surface
  • 6 Tablespoons unsalted butter, softened to room temperature
  • 1/2 cup packed light or dark brown sugar
  • 2 Tablespoons unsweetened natural or dutch process cocoa powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 3/4 cup semi-sweet chocolate chips or a 4 ounce semi-sweet chocolate bar, finely chopped
  • 3 Tablespoons heavy cream
  • 1 teaspoon espresso powder
  • 1 and 1/2 cups confectioners' sugar, sifted after measuring
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Activate the yeast by whisking warm milk with 2 tablespoons of sugar and yeast; let it sit until foamy.
  2. Combine remaining sugar, melted butter, eggs, salt, and flour; mix well until dough forms.
  3. Knead the dough until soft and elastic; let it rise in a greased bowl until doubled in size.
  4. Roll out the dough into a rectangle and spread the filling mixture over it; sprinkle chocolate chips.
  5. Roll tightly into a log, cut into pieces, and let rise again in a greased baking dish.
  6. Bake at 350°F for 25-28 minutes until golden brown. Drizzle with icing before serving.
