  • 1 cup milk (dairy or non-dairy)
  • 1 3/4 cups white flour (+ 3/4 cup separated)
  • 1/4 cup dark cocoa powder
  • 1/4 cup vegetable oil or melted coconut oil
  • 3/4 cup creamy peanut butter
  • 2 cups powdered sugar
  • 1/4 cup white sugar
  • 1/2 tbsp instant active dry yeast
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 4 oz cream cheese (at room temperature)
  • 4 tbsp unsalted butter (at room temperature)
  • 12 tbsp peanut butter (to taste)
  • 1 tsp vanilla extract
  • pinch of salt
  • chopped peanut butter cups

Instructions

  1. Activate the yeast by warming milk and oil to about 120°F, then sprinkle yeast on top and let sit for a few minutes.
  2. Mix in flour and cocoa powder, cover, and let rise for about an hour.
  3. Knead in salt, baking powder, baking soda, and additional flour as needed until smooth.
  4. Let rise again covered for up to 6 hours or overnight.
  5. Roll out the dough, spread peanut butter, sprinkle sugar and chocolate chips, then roll up tightly.
  6. Cut into pieces and place in a greased pan; let rise again for an hour.
  7. Preheat oven to 375°F and bake for 15–18 minutes until cooked through.
  8. Prepare frosting by mixing cream cheese, peanut butter, and butter; add powdered sugar until smooth.
  9. Frost cooled rolls and enjoy.
