  • 220 millilitres Whole milk
  • 1 packet (11 grams) Fast-action dried yeast
  • 50 grams Caster sugar
  • 1 medium Egg (room temperature)
  • 1 medium Egg yolk (room temperature)
  • 460 grams Strong white bread flour (plus more for dusting)
  • 50 grams Cocoa powder
  • 1 teaspoon Salt
  • 60 grams Unsalted butter (room temperature)
  • 120 grams Light brown sugar/muscovado sugar
  • 4 teaspoons Ground cinnamon
  • 1 large Orange (zest only)
  • 50 grams Milk chocolate
  • 75 grams Full-fat cream cheese (room temperature)
  • 50 grams Icing sugar
  • 1 large Orange (juice only)

Instructions

  1. For the dough, melt butter in warm milk, then stir in yeast and sugar until frothy.
  2. Combine flour, cocoa powder, and salt in a bowl; add the yeast mixture along with room temperature egg and yolk.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth.
  4. Let the dough rise in an oiled bowl covered with a cloth for 1-2 hours until doubled.
  5. Prepare the filling by mixing room temperature butter with brown sugar, cinnamon, and orange zest.
  6. Roll out the risen dough into a rectangle; spread filling evenly over it.
  7. Roll tightly into a log, slice into pieces, and place cut-side up in a greased baking dish.
  8. Let them rise again for 30 minutes while preheating the oven to 180°C (350°F), then bake for about 20 minutes until golden brown.
  9. For the frosting, melt milk chocolate and mix with cream cheese; add icing sugar and orange juice until smooth.
  10. Drizzle frosting over warm rolls before serving.
