  • 240 ml (1 cup) lukewarm milk
  • 7 g (1 1/2 tsp) dry baker’s yeast
  • 430 g (3 1/2 cups) all-purpose flour
  • 60 g (1/3 cup) granulated sugar
  • 1 pinch salt
  • 1 egg (room temperature)
  • 70 g (1/3 cup) melted butter
  • 50 g (1/2 cup) unsweetened cocoa powder
  • 120 g (2/3 cup) brown sugar
  • 2 tbsp unsweetened cocoa powder
  • 2 tsp ground cinnamon
  • 55 g (1/4 cup) softened butter
  • 1 tsp vanilla extract
  • 70 g (2/3 cup) powdered sugar
  • 60 ml (1/4 cup) heavy cream

Instructions

  1. In a bowl, mix lukewarm milk with dry yeast and let it sit for about 5–10 minutes until frothy.
  2. In a stand mixer bowl, combine flour, granulated sugar, cocoa powder, and salt. Mix on medium speed until blended.
  3. Add egg, melted butter, and activated yeast mixture to dry ingredients. Knead for about 3 minutes until smooth.
  4. Cover the dough with plastic wrap and let it rise at room temperature for about 1 to 2 hours until doubled in size.
  5. While rising, mix brown sugar, cocoa powder, ground cinnamon, and vanilla in a small bowl for the filling.
  6. Once risen, roll out dough into a rectangle about 0.5 cm thick on a floured surface.
  7. Spread softened butter over the rolled-out dough and sprinkle the filling evenly.
  8. Roll tightly from one end to another and cut into equal pieces.
  9. Place rolls in a baking dish with space between them and let rise again for another 30–60 minutes.
  10. Preheat oven to 350°F (180°C) and bake for about 20–25 minutes until golden brown.
  11. Cool slightly before glazing: whisk together powdered sugar, cocoa powder, and heavy cream until smooth.
  12. Drizzle glaze over warm rolls before serving.
