  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp dried thyme or Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat olive oil. Season chicken with salt, pepper, and thyme. Sear for about 5-6 minutes per side until golden brown; set aside.
  3. Sauté garlic in the same skillet until fragrant, then add mushrooms and cook until softened (about 5 minutes). Stir in spinach until wilted.
  4. Pour in heavy cream and broth; simmer for 3-4 minutes to thicken.
  5. Place seared chicken in a greased baking dish and pour the creamy sauce over it. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
