  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup half-and-half
  • 3 cups fresh spinach
  • ½ cup flour
  • ¼ cup Parmesan cheese (finely shredded)
  • 1½ cups white grape juice (or chicken broth)
  • 1 teaspoon garlic powder
  • 4 cloves garlic (minced)
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons Italian seasoning

Instructions

  1. Pound chicken breasts to about ½ inch thick for even cooking. Dry with paper towels.
  2. Mix flour, salt, pepper, Italian seasoning, and garlic powder in a bowl. Dredge each chicken breast in the mixture.
  3. In a skillet over medium-high heat, melt butter with olive oil. Sear chicken for about 4-5 minutes on each side until golden brown.
  4. Remove chicken from the skillet; add white grape juice (or broth) and scrape up any browned bits. Let reduce by half for about 6-7 minutes.
  5. Gradually stir in warmed half-and-half until smooth; then add softened cream cheese until fully combined. Stir in fresh spinach until wilted.
  6. Return the chicken to the skillet to heat through and absorb flavors.
  7. Garnish with fresh parsley before serving.
