  • Salt & pepper, to taste
  • 3/4 cup plain Greek yogurt
  • 1 packet ranch seasoning
  • 3 tbsp mayonnaise
  • 3/4 cup shredded cheddar cheese

Instructions

  1. Cook pasta according to package instructions; add chopped broccoli in the last few minutes. Drain and set aside.
  2. Season chicken with salt and pepper. Pan-sear or bake until golden brown and cooked through; slice into strips.
  3. Prepare bacon alternative (turkey bacon or plant-based) until crisp and crumble.
  4. In a bowl, whisk together Greek yogurt, ranch seasoning, and mayonnaise until smooth.
  5. In a large bowl or meal prep containers, combine cooked pasta, chicken strips, broccoli, crumbled bacon alternative, and shredded cheddar cheese. Drizzle with sauce and toss well.
  6. Store in airtight containers in the fridge for up to four days.
