  • 2 slices of sourdough or artisan bread
  • 1/2 ripe avocado, mashed
  • 1/2 cup cooked shredded chicken (grilled or rotisserie)
  • 2 slices of cheddar or Monterey Jack cheese
  • 1 tbsp mayonnaise or aioli (optional)
  • 1 tsp lemon juice
  • 1 tbsp butter (for toasting)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocado with lemon juice, salt, and pepper until smooth.
  2. Spread mayonnaise (if using) on one side of each slice of bread. On one slice (the un-mayo side), layer the avocado mixture first, followed by shredded chicken and cheese. Top with the second slice of bread, mayo side facing out.
  3. Melt butter in a skillet over medium heat. Add your sandwich and grill for about 3–4 minutes per side until golden brown and the cheese is melted.
  4. Remove from heat, slice in half if desired, and serve hot.
