Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 2 cups light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons instant espresso powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 4 ounces chopped semi-sweet chocolate
  • 1 cup dark chocolate chips
  • 1 teaspoon sea salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter and brown sugar using a mixer until light and fluffy.
  3. Add eggs and vanilla extract to the mixture, mixing until well combined.
  4. In a separate bowl, whisk together flour, cocoa powder, espresso powder, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
  5. Gently fold in chopped semi-sweet chocolate and dark chocolate chips.
  6. Scoop out 2-tablespoon portions of dough onto the prepared baking sheets, spacing them at least 2 inches apart.
  7. Bake for about 10 minutes or until edges are lightly golden. Tap the baking sheet gently on the counter after removing from the oven to slightly sink the centers if desired.
  8. Allow cookies to cool on the tray before sprinkling with sea salt.
