Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup milk (dairy or non-dairy)
  • ⅓ cup vegetable oil (or melted coconut oil)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pitted fresh cherries (or thawed frozen cherries)
  • ½ cup all-purpose flour (for streusel topping)
  • ⅓ cup brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ cup cold unsalted butter, diced

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin by greasing it or lining it with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix milk, vegetable oil, egg, and vanilla until smooth. Pour this mixture into the dry ingredients and fold gently to combine.
  4. Fold in the cherries carefully to avoid breaking them.
  5. In a separate bowl, combine flour, brown sugar, cinnamon, and diced cold butter for the streusel topping; mix until crumbly.
  6. Fill each muffin cup two-thirds full with batter and top generously with streusel.
  7. Bake for 20–25 minutes until golden brown and a toothpick inserted into the center comes out clean.
