  • 1 pound turkey sausage (or chicken sausage)
  • 4 cups baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese (or cheese of your choice)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the baby potatoes into halves or quarters.
  3. Slice the turkey sausage into 1/4-inch thick rounds.
  4. In a small bowl, combine ranch seasoning, garlic powder, onion powder, and black pepper.
  5. Toss the potatoes with olive oil and half of the seasoning mixture in a large bowl until well-coated.
  6. Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
  7. Scatter the sliced sausage over the potatoes evenly.
  8. Roast in the oven for about 35-40 minutes until golden brown, stirring halfway through.
  9. Sprinkle shredded cheese on top and return to the oven for another five minutes until melted.
  10. Garnish with chopped parsley before serving.
