  • 200 grams cheese (cheddar or similar)
  • 2 tablespoons fresh rosemary (finely chopped)
  • 2 tablespoons fresh parsley leaves (finely chopped)
  • 2 garlic cloves (crushed)
  • 3 tablespoons extra virgin olive oil
  • 2¼ cups plain flour
  • 1 teaspoon baking soda
  • ½ cup plain yogurt
  • ¾ cup milk
  • 2 large eggs
  • 50 grams unsalted butter (melted)

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a loaf pan.
  2. In a small bowl, mix rosemary, parsley, dried oregano, thyme, crushed garlic, olive oil, and salt to create an herb paste.
  3. Whisk together flour, baking soda, and salt in another bowl.
  4. In a separate bowl, combine yogurt, milk, eggs, melted butter, and remaining garlic until smooth.
  5. Fold wet ingredients into dry ingredients until just combined.
  6. Layer one-third of the batter in the loaf pan; dollop one-third of the herb mixture and a third of the cheese slices on top. Repeat twice.
  7. Bake for about 30 minutes until golden; cover with foil and bake for an additional 20 minutes.
  8. Cool for five minutes before transferring to a wire rack.
