  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp each of chopped fresh thyme, rosemary, and sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk

Instructions

  1. Preheat your oven to 425°F. In a bowl, mix together flour, baking soda, and salt. Stir in the herbs and cheddar.
  2. Pour in the buttermilk and mix until combined.
  3. Turn the dough onto a floured surface and knead gently just until it forms a ball. Pat into a circle about 7 inches wide.
  4. Transfer to a floured baking sheet and score a cross on top about ½ inch deep.
  5. Bake for 15 minutes at 425°F, then reduce heat to 375°F and bake for another 30 to 35 minutes until hollow-sounding when tapped.
  6. Cool wrapped in a tea towel before slicing.
