  • 2 1/4 teaspoons instant yeast
  • 2 large eggs
  • 1/2 cup salted butter, melted
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 1 1/2 cups finely shredded carrot
  • 3/4 cup shredded coconut
  • 4 1/2 cups bread flour, divided
  • 3/4 cup salted butter, almost melted
  • 1 1/2 cups packed brown sugar
  • 3 tablespoons cinnamon
  • 1/2 cup heavy cream
  • 6 ounces cream cheese, softened
  • 1/3 cup salted butter, softened
  • 2 cups powdered sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Activate yeast by mixing warm milk and instant yeast in a bowl.
  2. Combine eggs, melted butter, salt, cinnamon, sugar, carrots, and coconut into the yeast mixture.
  3. Add 4 cups of flour gradually; mix until just combined.
  4. Knead dough until smooth; let it rise in a greased bowl until doubled in size (about 30 minutes).
  5. Prepare filling by mixing softened butter, brown sugar, and cinnamon.
  6. Roll out dough into a rectangle; spread the filling evenly on top.
  7. Roll up tightly and slice into 12–15 pieces; arrange in greased baking pan.
  8. Let rolls rise again for about 20 minutes; then pour warm heavy cream over them before baking at 350°F for 27–30 minutes.
  9. While cooling slightly, prepare frosting by mixing softened cream cheese with butter, powdered sugar, and vanilla.
  10. Frost warm rolls and enjoy!
