  • ½ cup granulated sugar
  • ½ cup light brown sugar (packed)
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ½ cup oil (canola/vegetable)
  • ½ cup sour cream (or yogurt/applesauce)
  • 2 large eggs
  • 1 ½ tsp vanilla extract
  • 1 ½ cups shredded carrots
  • 16 oz cream cheese (softened)
  • ½ cup granulated sugar for cheesecake layer
  • 1 tsp vanilla extract for cheesecake layer

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together flour, sugars, baking soda, baking powder, salt, and spices until well combined.
  3. In another bowl, mix oil, sour cream (or yogurt/applesauce), eggs, and vanilla until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; then add shredded carrots.
  5. In a separate bowl, beat cream cheese with sugar and vanilla until creamy; add eggs one at a time.
  6. Spread half of the carrot cake batter into the prepared dish, dollop cheesecake mixture on top, then swirl in remaining carrot batter.
  7. Bake for 35–40 minutes or until toothpick comes out clean.
  8. Cool for at least 30 minutes before refrigerating for two hours before serving.
