  • 2 cups shredded carrots (about 4 medium)
  • 1 cup pecan chips (plus an extra 1/2 cup for topping)
  • 1 container cream cheese frosting (about 16 oz)
  • 1 bag (16 oz) Ghirardelli white chocolate melting wafers

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a stand mixer, combine sugar, canola oil, and eggs until fluffy.
  3. Sift in flour, baking soda, baking powder, salt, and cinnamon; gently fold together.
  4. Incorporate shredded carrots and pecan chips until well mixed.
  5. Pour batter into the prepared dish and bake for 30–40 minutes until a toothpick comes out clean.
  6. Allow cake to cool completely before crumbling into fine pieces.
  7. Mix crumbled cake with cream cheese frosting until dough-like.
  8. Roll mixture into 1-inch balls and chill for at least one hour.
  9. Dip each ball in melted white chocolate and sprinkle with additional pecans before letting set.
