  • 2 pounds beef round or chuck steak
  • 1 tablespoon adobo seasoning
  • 3 tablespoons vegetable oil
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • ¼ cup sofrito
  • 4 cloves garlic, minced
  • 8 ounces tomato sauce
  • ½ cup water
  • 1 pound potatoes, cut into bite-sized pieces
  • 1 large carrot, peeled and cut into bite-sized pieces

Instructions

  1. Trim the beef and cut it into 1-inch cubes. Pat dry and season generously with adobo seasoning, salt, and pepper.
  2. In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Sear the beef in batches until browned on all sides. Remove from pot.
  3. Lower the heat to medium; sauté chopped onion and bell pepper with sofrito for about 5 minutes until softened.
  4. Add minced garlic; cook for an additional minute.
  5. Return seared beef to the pot; stir in tomato sauce, water, and seasonings.
  6. Bring to a boil, reduce heat to low, cover, and simmer for about 30 minutes.
  7. Add potatoes and carrots; bring back to a boil then simmer for another 30 minutes until everything is tender.
