  • 200g all-purpose flour (about 1 ½ cups)
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 ½ tsp ground cardamom
  • 150g unsalted butter, softened (about ¾ cup)
  • 200g granulated sugar (about 1 cup)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120ml whole milk (about ½ cup)
  • Optional: ¼ cup sour cream

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and line your cake pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, salt, and ground cardamom.
  3. In a large mixing bowl, cream softened butter and sugar until light and fluffy, about 3–4 minutes.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually mix the dry ingredients into the butter mixture alternately with milk until just combined. If using sour cream, fold it in now.
  6. Pour batter into prepared pan and smooth the top. Optionally sprinkle pearl sugar on top before baking.
  7. Bake for about 30–35 minutes or until a toothpick comes out clean from the center.
  8. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
