  • 2 tablespoons powdered sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup ricotta cheese (drained)
  • 3/4 cup milk
  • 2 large eggs
  • 2 teaspoons fresh orange zest
  • 1 teaspoon vanilla extract
  • 3/4 cup mini chocolate chips

Instructions

  1. In a large mixing bowl, whisk together the flour, powdered sugar, baking powder, cinnamon, and salt.
  2. In another bowl, combine the drained ricotta, milk, eggs, orange zest, and vanilla; whisk until smooth.
  3. Make a well in the dry ingredients and pour in the wet mixture. Gently fold until just combined; it's okay if there are some lumps.
  4. Stir in the mini chocolate chips.
  5. Heat a non-stick skillet over medium heat and melt some butter to coat the surface.
  6. Pour about half a cup of batter into the skillet for each pancake; cook until bubbles form on top (about 2-4 minutes), then flip and cook for another 2-4 minutes until golden brown.
