  1. Scrub the oranges thoroughly, then slice them crosswise into ⅛-inch thick rounds.
  2. Blanch the orange slices in boiling water for about 10 minutes to remove bitterness, then transfer to ice water.
  3. In a pot, dissolve sugar in fresh water and bring to a boil to create a syrup.
  4. Add blanched orange slices back into the syrup and simmer gently for 45-60 minutes until translucent.
  5. Transfer slices to wire racks and dry in the oven at 175°F for about 30 minutes before rolling in sugar.
  6. Allow cooled slices to dry completely before storing in an airtight container.
