  • 3 cups filtered water (plus extra for blanching)
  • 3 cups granulated sugar (plus extra for rolling)

Instructions

  1. Wash the grapefruit thoroughly and cut each in half. Carefully scoop out the flesh while leaving the peels intact.
  2. Blanch the peels in boiling water for about 10 minutes. Drain and rinse under cold water; repeat this process twice more.
  3. In a pot, combine blanched peels, 3 cups filtered water, and 3 cups sugar. Bring to a gentle boil over medium heat until sugar dissolves.
  4. Lower the heat and simmer for about 60 minutes until peels are translucent.
  5. Remove from syrup with tongs, drain briefly, and roll in granulated sugar.
  6. Place on a parchment-lined baking sheet to dry at room temperature for at least 2 hours.
