  • 1 large avocado, sliced
  • 1 small cucumber, julienned
  • 6 sheets roasted seaweed (nori)
  • 1 cup crispy fried onions or tempura flakes
  • 2 tablespoons toasted sesame seeds (optional)
  • 3 tablespoons mayonnaise
  • 1 tablespoon sriracha or chili sauce (adjust to taste)
  • 1 tablespoon unseasoned yogurt-based sauce for a lighter alternative
  • Soy sauce for dipping

Instructions

  1. Rinse the short-grain rice under cold water until clear, then cook with water until fluffy.
  2. In a saucepan, heat rice vinegar with sugar and salt until dissolved; pour over warm rice and fold gently.
  3. Prepare fillings: shred imitation crab, slice avocado, and julienne cucumber.
  4. On a bamboo mat lined with plastic wrap, lay nori shiny side down and spread sushi rice evenly, leaving a border.
  5. Flip the nori and add crab, cucumber, and avocado at the bottom third; roll tightly using the mat.
  6. Top with mayonnaise or sriracha mayo followed by crispy onions; press gently to secure.
  7. Slice with a wet knife into pieces and serve with soy sauce.
