  • 3 chicken breasts, cut into small strips
  • 13 tbsp Cajun seasoning
  • 1 tsp salt
  • 1 tbsp olive oil
  • ½ tbsp butter
  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp chopped sun-dried tomatoes
  • 1 tbsp tomato paste
  • 1 cup (200g) orzo pasta
  • 1 cup (240ml) chicken broth
  • 1 cup (30g) shredded spinach
  • ¼ cup (60ml) heavy cream
  • 3 tbsp grated parmesan cheese

Instructions

  1. Season the chicken strips with Cajun seasoning and salt. Heat olive oil and butter in a pan over medium heat until melted. Add the chicken and sauté until golden.
  2. Stir in diced onion and minced garlic, followed by sun-dried tomatoes and tomato paste. Cook for about five minutes until fragrant.
  3. Add orzo and stir for one minute before pouring in the chicken broth. Cover and simmer for about 20 minutes, adding water if needed.
  4. Once the orzo is cooked al dente, mix in shredded spinach until wilted.
  5. Stir in heavy cream and Parmesan cheese until combined. Adjust seasoning as needed before serving hot.
