  • 1 lb pasta
  • 1/3 cup reserved pasta water

  1. Preheat oven to 450°F. On a baking sheet lined with parchment, combine frozen butternut squash, chopped tomatoes, and sliced onion. Drizzle with olive oil, then season with salt, pepper, and thyme. Toss to coat.

  3. Cook pasta according to package instructions; reserve 1/3 cup of pasta water before draining.
  4. In a blender, combine roasted veggies and reserved pasta water. Blend until smooth.
