  • 1/2 pound mezzi rigatoni (or small pasta)
  • 1 1/4 cups shredded cheddar cheese
  • 3/4 cup shredded smoked gouda cheese
  • 1/2 cup shredded parmesan cheese
  • 1/4 cup unsalted butter
  • 1/4 cup flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground pepper

Instructions

  1. Cook the pasta according to package instructions until al dente; drain and set aside.
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for about 2 minutes.
  3. Gradually add milk while whisking until thickened.
  4. Stir in the cheeses until melted and smooth, then mix in salt, nutmeg, pepper, and butternut squash.
