  • 1 teaspoon onion powder

  • 2 cups cooked brown rice
  • 1 cup corn kernels (fresh or canned)
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 avocado, sliced
  • 1/4 cup crumbled dairy-free cheese or omit
  • 1/4 cup ranch dressing
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper in a bowl.
  3. Rub the seasoning mixture over the chicken breasts.
  4. Bake in a dish for 20-25 minutes until cooked through.
  5. Let the chicken rest before slicing.
  6. In a large bowl, combine brown rice, corn, black beans, cherry tomatoes, and red onion.
