  • 2 packs (400 g each) artisan flatbread
  • 5 tablespoons pesto
  • 1 cup fresh mozzarella, sliced
  • 4 roma tomatoes, diced
  • 0.25 cup fresh basil leaves, thinly sliced
  • 2 cloves garlic, minced
  • 0.25 cup Parmesan cheese, grated
  • 0.5 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt, to taste

Instructions

  1. Preheat your oven to 220°C (425°F) and line a baking sheet with foil.
  2. In a bowl, combine diced tomatoes, basil leaves, minced garlic, Parmesan cheese, balsamic vinegar, olive oil, and salt to form the bruschetta mixture.
  3. Place the flatbreads on the baking sheet and evenly spread pesto over them. Top with mozzarella slices.
  4. Bake for about 10 minutes or until the cheese is melted and edges are crispy.
