  • 3/4 cup (150 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla
  • 1/3 cup Dutch-process cocoa powder
  • 1 cup (125 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup semi-sweet chocolate chips
  • 2 3/4 cups (345 g) all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (226 g) unsalted butter, cold and cubed
  • 3/4 cup (150 g) light brown sugar, packed
  • 2/3 cup (130 g) granulated sugar
  • 1 egg, plus 1 egg yolk, room temperature
  • 2 teaspoons vanilla
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F. Line two large baking sheets with parchment paper and set them aside.
  2. In a stand mixer bowl, mix together the butter and brown sugar for about 3 minutes until light and fluffy. Add the egg and vanilla; mix until combined.
  3. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Sift the dry ingredients into the wet mixture. Mix on low speed until combined. Stir in the chocolate chips with a spatula. Set aside.
  4. In a clean stand mixer bowl, add cold butter along with brown sugar and granulated sugar. Mix on low speed before increasing speed; cream for about 4 minutes until pale and fluffy.
  5. Add the egg and egg yolk one at a time; scrape down sides between additions. Mix in vanilla extract.
  6. In another bowl, whisk together flour, baking soda, cornstarch, and salt. Gradually add dry ingredients to wet mixture in two additions; mix on low until just combined.
  7. Using a small cookie scoop, scoop brownie dough balls slightly smaller than chocolate chip dough balls. Roll them into uniform balls using your hands. Press one brownie ball against one chocolate chip ball; roll them together into a single ball.
  8. Place formed cookie balls on prepared baking sheets about 2 inches apart. Bake one sheet at a time in the center for 8-9 minutes until edges are set but tops look slightly underbaked. Remove from oven; cool on sheets for 5-10 minutes before transferring to wire racks.
