  • 2 medium broccoli heads
  • 1 large carrot
  • 1 apple
  • 1/2 small red onion
  • 1/2 cup toasted pecans or walnuts
  • 1/2 cup craisins or raisins
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 Tbsp freshly squeezed lemon juice
  • 1/2 Tbsp sugar
  • Sea salt and black pepper to taste

Instructions

  1. Toast the pecans or walnuts in a skillet over medium-high heat for about 4–5 minutes until fragrant. Set aside to cool.
  2. Chop the broccoli into bite-sized pieces and place it in a large mixing bowl.
  3. Grate or julienne the carrot and add it to the bowl.
  4. Core and chop the apple, thinly slice the red onion, then add both to the mix.
  5. Add the toasted nuts and dried cranberries (or raisins) to the bowl.
  6. In a separate bowl, combine mayonnaise, sour cream, lemon juice, sugar, salt, and pepper until smooth.
  7. Pour the dressing over the salad mixture and toss gently until everything is evenly coated.
  8. Chill in the refrigerator for at least 30 minutes before serving.
