  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about 1½ pounds)
  • 2 medium peaches, thinly sliced
  • Salt and pepper, to taste

Instructions

  1. In a bowl, mix peach preserves, olive oil, apple cider vinegar, salt, and pepper until well combined.
  2. Reserve half of the mixture for later use. Marinate the salmon in the remaining sauce for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear marinated salmon skin-side up for about 2-3 minutes until golden brown.
  5. Flip the salmon skin-side down and add peach slices around it. Pour reserved marinade evenly over everything.
  6. Bake in the preheated oven for 12-15 minutes or until the internal temperature reaches 145°F (63°C).
