Ingredients

Scale
  • 4 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 packet (7g) instant yeast
  • ½ teaspoon salt
  • ½ cup whole milk, warmed
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 2 cups whole milk (for pastry cream)
  • 4 large egg yolks
  • ¼ cup cornstarch
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. In a mixing bowl, combine flour, sugar, instant yeast, and salt. Add warmed milk, eggs, melted butter, and mix until soft dough forms. Knead gently until smooth.
  2. Cover the dough and let it rise in a warm spot until doubled in size (about 1 hour).
  3. Prepare pastry cream: Heat milk and half of the sugar in a saucepan. Whisk egg yolks with cornstarch and remaining sugar. Gradually combine with warm milk mixture and cook until thickened. Stir in vanilla extract and butter; cool completely.
  4. Roll out the risen dough to about ½ inch thick and cut into circles. Let them rise for another 30 minutes.
  5. Heat vegetable oil in a deep skillet to around 350°F (175°C). Fry dough circles until golden brown on both sides (2-3 minutes each). Drain on paper towels.
  6. Fill bomboloni with cooled pastry cream using a piping bag and dust with powdered sugar before serving.
