- ¾ cup fresh or frozen blueberries
- 2 tbsp balsamic vinegar
- 1 tbsp honey or maple syrup
- 1 tsp Dijon mustard
- Zest and juice of 1 lemon
- 1 cup dry couscous
- 1 cup boiling vegetable broth
- Fresh parsley or basil for garnish
- 1 tsp olive oil
- Salt & black pepper to taste
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

- Pat salmon fillets dry; brush with olive oil and season with salt and pepper.

- Bake for 12-15 minutes until salmon flakes easily.
- Meanwhile, combine couscous with boiling vegetable broth in a bowl; cover and let sit for 5 minutes.
- Fluff couscous with a fork; stir in lemon juice, olive oil, salt, pepper, and chopped herbs before serving.
