  • 4 salmon fillets (56 oz each)
  • ¾ cup fresh or frozen blueberries
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Zest and juice of 1 lemon
  • 1 cup dry couscous
  • 1 cup boiling vegetable broth
  • Fresh parsley or basil for garnish
  • 1 tsp olive oil
  • Salt & black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix blueberries, balsamic vinegar, honey or maple syrup, Dijon mustard, and lemon zest.
  3. Pat salmon fillets dry; brush with olive oil and season with salt and pepper.
  4. Place salmon on the prepared baking sheet and spoon the blueberry glaze over each fillet.
  5. Bake for 12-15 minutes until salmon flakes easily.
  6. Meanwhile, combine couscous with boiling vegetable broth in a bowl; cover and let sit for 5 minutes.
  7. Fluff couscous with a fork; stir in lemon juice, olive oil, salt, pepper, and chopped herbs before serving.
