  • 2 cups vegetable broth (or water)
  • 2 cans (15 oz each) black beans
  • 1/2 cup sliced green onions
  • 1 cup chopped cilantro
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 shallot (minced)
  • 1 tbsp honey
  • Sea salt and black pepper to taste

Instructions

  1. Rinse the quinoa under cold water and cook it in a saucepan with vegetable broth according to package instructions. Let sit covered for five minutes after cooking.
  2. In a large bowl, whisk together lime juice, olive oil, minced shallot, honey, sea salt, and black pepper until emulsified.
  3. Drain and rinse the black beans before adding them to the bowl along with the cooked quinoa, green onions, and cilantro.
  4. Gently fold everything until well mixed.
  5. Chill in the refrigerator for at least one hour before serving.
