  • 2 tsp instant coffee
  • 3/4 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, sugars, cocoa powder, and salt.
  3. In another bowl, mix together the wet ingredients: eggs, vegetable oil, buttermilk mixture (milk + vinegar), sour cream, and instant coffee until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined; then fold in boiling water cautiously.
  5. Divide the batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. For frosting: melt dark chocolate with corn syrup; beat cream cheese with cocoa powder and powdered sugar; combine with whipped heavy cream.
