  • 4 lbs chicken parts (about 4 cups shredded cooked chicken)
  • 2 tbsp olive oil
  • 1 cup grapes (seedless, halved)
  • 1 cup sliced almonds
  • 2 stalks celery (finely diced)
  • 3 scallions (thinly sliced)
  • 2 tbsp dill (fresh, chopped)
  • 1 tbsp parsley (fresh, chopped)
  • 1 cup mayonnaise
  • Juice of 1 lemon
  • 1 tbsp Dijon mustard
  • 1 tsp Kosher salt
  • Freshly ground pepper

Instructions

  1. Preheat your oven to 350°F.
  2. Rub olive oil over chicken parts and season with salt and pepper. Bake for 45-55 minutes until cooked through (165°F internal temperature). Cool slightly, then shred into bite-sized pieces.
  3. In a large bowl, mix shredded chicken with grapes, almonds, celery, scallions, dill, and parsley.
  4. In a separate bowl, whisk mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth. Combine with the chicken mixture gently.
  5. Chill in the refrigerator for at least an hour before serving.
