  • 2 bulbs garlic
  • 1/2 onion, diced
  • 1 tbsp extra-virgin olive oil
  • 1 1/2 cups organic heavy cream
  • 2 cups organic vegetable broth
  • 4 tbsp organic tomato paste
  • 1 tsp sea salt
  • 1 tsp all-purpose seasoning blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat oven to 400°F (200°C). Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for about 30-35 minutes until golden and soft.
  2. In a large pot over medium heat, sauté diced onion in olive oil until translucent (about 5-7 minutes).
  3. Squeeze roasted garlic into the pot. Add tomato wedges, vegetable broth, tomato paste, salt, seasoning blend, and smoked paprika. Stir well.
  4. Bring to a simmer and cook for approximately 15-20 minutes until tomatoes are soft.
  5. Blend the mixture using an immersion blender until smooth.
  6. Stir in heavy cream and adjust seasoning as needed.
