  • 1/2 medium yellow onion (finely diced)
  • 1 tablespoon minced garlic
  • 1 can (15 oz.) pinto beans (drained and rinsed)
  • 1 can (15 oz.) kidney beans (drained and rinsed)
  • 1 can (15 oz.) tomato sauce
  • 1 can (15 oz.) diced tomatoes
  • 3 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 3 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoons salt
  • 1/4 teaspoon ground pepper
  • 1 cup beef broth (chicken broth or water works, too)

Instructions

  1. Heat a large stockpot over medium-high heat. Add ground beef, onion, and garlic; sauté for about 7-10 minutes until browned.
  2. Stir in pinto beans, kidney beans, tomato sauce, diced tomatoes, tomato paste, and maple syrup until combined.
  3. Add chili powder, garlic powder, cumin, smoked paprika, salt, and pepper. Pour in beef broth and stir well.
  4. Bring to a boil; then reduce heat to low and let simmer for 10-15 minutes until thickened.
  5. Serve hot topped with shredded cheese, Fritos, or green onions.
