  • 2 pounds stewing beef (chuck or round)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 2 teaspoons smoked paprika
  • 1 large onion (diced)
  • 3 cloves garlic (minced or pressed)
  • 3 medium carrots (chopped)
  • 2 stalks celery (chopped)
  • 1/2 cup apple vinegar
  • 2 tablespoons tomato paste
  • 1/2 cup tomato sauce
  • 3 cups low sodium beef stock
  • 5 medium white potatoes (quartered)
  • 1 cup frozen green beans (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). In a large Dutch oven, heat olive oil over medium-high heat.
  2. Season the beef with salt and pepper, then brown in batches without overcrowding the pot. Remove and set aside.
  3. Sauté thyme, smoked paprika, onion, garlic, carrots, and celery in the same pot until onions are translucent.
  4. Return beef to the pot, add apple vinegar and tomato paste, cooking for five minutes.
  5. Stir in tomato sauce and low sodium beef stock along with quartered potatoes; mix well.
  6. Cover the pot and bake in the oven for about three hours, stirring occasionally. Add frozen green beans during the last 30 minutes if desired.
  7. Serve warm garnished with fresh parsley.
