  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef with diced onions and minced garlic until cooked through. Drain excess fat.
  3. Stir in the enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper. Simmer for about 5 minutes.
  4. Layer half of the corn tortillas in the baking dish; top with half of the beef mixture and half of both cheeses.
  5. Repeat layers with remaining tortillas, beef mixture, and cheese.
  6. Bake for approximately 25 minutes until cheese is bubbly and lightly browned.
  7. Allow to rest for a few minutes before serving.
