  • 1/2 cup buttermilk
  • 3/4 cup cornstarch
  • 1/2 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 1–2 tbsp sriracha
  • Juice of 1/2 lime
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste
  • 2–3 tbsp neutral oil (for frying)

Instructions

  1. Marinate the chicken thighs in buttermilk, garlic powder, onion powder, salt, and pepper for at least 15 minutes.
  2. Prepare the sauce by whisking together mayonnaise, Thai sweet chili sauce, sriracha, honey (optional), and lime juice.
  3. Dredge marinated chicken in cornstarch until well coated.
  4. Heat oil in a skillet over medium-high heat and cook the chicken for 4–5 minutes per side until golden brown.
