  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 3 ripe bananas (chopped)
  • Vegetable oil (for frying)
  • Optional: Powdered sugar for dusting

Instructions

  1. In a medium mixing bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well combined.
  2. In a large mixing bowl, combine flour, brown sugar, baking powder, cinnamon, and salt.
  3. Gently fold the wet ingredients into the dry ingredients until just combined; avoid overmixing to keep fritters fluffy.
  4. Fold in the chopped ripe bananas until evenly distributed in the batter.
  5. Heat vegetable oil in a large pot over medium-high heat (aim for 350°F).
  6. Scoop out portions of batter into the hot oil; fry until golden brown on both sides (about 4-5 minutes per side).
  7. Remove fritters from the oil and place them on paper towels to drain excess oil.
