  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons melted butter
  • ¾ cup sugar (divided)
  • 3 cups milk (divided)
  • 5 egg yolks
  • 5 tablespoons cornstarch
  • ¼ teaspoon salt
  • 1 ½ teaspoons banana extract
  • 2 cups heavy whipping cream
  • 2 bananas (sliced)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until crumbly. Press into an even layer in an 11×7 baking dish. Bake for 15 minutes and let cool.
  3. In a saucepan over medium heat, warm 2 cups milk. In another bowl, whisk together egg yolks, cornstarch, remaining sugar, and salt. Gradually whisk into the warmed milk until thickened (about 5-7 minutes). Stir in banana extract.
  4. Pour half of the custard over the cooled crust; layer sliced bananas on top followed by the remaining custard. Chill for at least two hours.
  5. Whip heavy cream with remaining sugar until soft peaks form. Spread over chilled dessert before serving.
