  • 1 pound (450g) cremini or button mushrooms, cleaned and halved
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms gently using a damp cloth. Cut larger ones in half.
  3. In a bowl, whisk balsamic vinegar, olive oil, garlic, thyme, salt, black pepper, and optional red pepper flakes.
  4. Add mushrooms to the bowl and toss until well coated; let them marinate for about 5 minutes.
  5. Spread the mushrooms on the baking sheet in a single layer and roast for 20–25 minutes, stirring halfway through.
  6. Once cooked, garnish with fresh parsley and serve warm.
